Pinto Bean Pie

We provide this free seniors' recipe to visitors of the Community Room of SeniorSSuperStoreS in an effort to keep baby boomers, seniors and the elderly informed of matters that can enhance their lifestyle.

While Pinto Bean Pie is a desert, it is full of fiber and protein.

Ingredients:

15 ounce can of cooked pinto beans, mashed in their liquid.

1 cup shredded cocomut

1 cup chopped nuts - preferably, pecans

4 eggs

3 cups sugar

1 tbsp vanilla

2 sticks of margerine, melted

3 unbaked pie shells

Directions:

Mix and bake about one hour at 300 degrees. Makes 3 pies
