Nut and Grain Pancakes

We provide this free seniors' recipe to visitors of the Community Room of SeniorSSuperStoreS in an effort to keep baby boomers, seniors and the elderly informed of matters that can enhance their lifestyle.

A tasty and nutritious pancake recipe, similar to the popular selection at IHOP.

Ingredients:

2 cups of Bisquick

1/2 cup wheat flour

1/2 cup oatmeal ground in food processor

3 eggs

1/2 cup low fat buttermilk

1/2 cup low fat milk

2 tsp brown sugar

1 1/4 cup chopped pecans and/or walnuts

2 tblsp cooking oil or bacon grease

Directions:

Mix all of the dry ingredients, including nuts, in a bowl.

Mix wet ingredients, including eggs, buttermilk and milk in another bowl

Combine the dry and wet ingredients and mix to a pasty consistency. Add more milk to desired consistency.

Cook the pancakes on a griddle sprayed with your favorite vegetable spray.

Leftovers may be spread on a cookie sheet and frozen. After they are completely frozen, bag them in a freezer bag and take out as many as you wish when you want a quick and tasty 'comfort food' meal.
